Vegan Jalapeno Cheese Pasta [Gluten Free] and Chickpea Mac is gluten free. Made with a chickpea pasta, and lentil, jalapenos, and Mexican spices, full of flavor, and ready in under 45 minutes. 


INGREDIENTS

  • 1 can (15 oz) chickpeas (drained)
  • 16 oz (2 boxes) chickpeas shells
  • 8.5–10c water
  • 2 sliced jalapenos. (You can keep seeds if yo want extra spicy)
  • pinch of sea Salt
  • 1/2 tsp chili (powder)
  • Pinch of cumin
  • 1/4 to 1/2 tsp each salt salt/pepper (divided)
  • 1/2 tsp paprika
  • 1– 2 tsp tsp garlic minced (divided)
  • 1/4 tsp garlic salt
  • 2–3 tbsp olive oil or avocado oil (divided)

For the cheese sauce:

  • 3/4 c nutritional yeast
  • Cilantro and crushed red pepper to garnish.
  • 3/4c coconut or you can using almond milk plus 1/4 cup water or broth
  • 1 tbsp tapioca starch or gluten free flour
  • Extra nutritional yeast if desired
  • Optional 2 tbsp taco sauce or Tabasco.


INSTRUCTIONS

  1. Preheat stove 400F. Cut jalpenos 1/4 in to 1/2 inch thick. In the event that you cut them too thick they will cook quicker than the time I suggest.
