This is my go-to icing formula for all cakes and cupcakes. It turns out flawless without fail!


INGREDIENTS


  • 3 cups powdered sugar
  • 1 to 2 tablespoons heavy or regular whipping cream
  • 1 teaspoon vanilla extract (you can use clear extract, if you really want it white)
  • 1 cup (2 sticks) butter, at room temperature

INSTRUCTIONS

  • In a huge bowl, with a hand or stand blender, cream together sugar and margarine on low speed. Blend until very much mixed. Increment speed to medium and beat for an additional 3 minutes. 
  • Include vanilla and 1 tablespoon of cream and keep on beating on medium speed for 1 minute more. Include more cream if necessary for wanted spreading/funneling consistency. Scoop into a channeling sack and pipe beautifully onto cupcakes, or spread onto cupcakes as wanted.
